Saturday breakfast recipe “healthier” banana french toast!
Every Sunday I try to do brunch with my girlfriends here in the city. Whoever is in town we pick a place, spend an entire afternoon brunching and chatting. It’s one of the things I’ve been doing since I moved to NYC and can’t imagine my weeks without Sunday brunch. However, Saturday is a different story … Saturday’s are “productive” days filled with catching up on little things, errands and such but recently I’ve decided to take Saturday’s a little easier. Starting the day by whipping up an actual breakfast as opposed to the standard yogurt and berries. The first of many recipes to come is a banana french toast recipe I found years ago, I’ve adjusted certain elements of it to make it slightly healthier.

Ingredients:
- 4 egg whites
- 8 Slices whole-wheat (or 7-grain) bread
- ½ cup skim milk
- 1 tspn vanilla extract
- 2 tspn Splenda
- 2 – 3 Ripe banana
- 4 Tbl Maple syrup (I opt for a reduced calorie version but the real thing is just fine}
Instructions:
Combine egg whites, vanilla, milk, splenda and 2 bananas in a blender. Run on high for a minute or two, you want this mixture to be smooth.
Pour this into a square glass baking dish. You’ll fill the dish, it’s OK!
Drop two slices at a time into the mixture, soak till both sides have mixture on them. Place them on a skillet, flipping until both sides are a nice toasty golden brown color. Put on a plate, top with a few sliced bananas and syrup and you’re good to go.
